In the vineyard...

 

Consisting of gravelly earth, not very calcareous, with silts and clay. The grapes are 2/3 from Pinot Noir and 1/3 of Gamay. The vines were planted about thirty years ago, on 80 ares.

 

In the glass...

 

The Gamay is the King of the Beaujolais wine, although not heavily cultivated in the Cote d'Or. In our area, blend with Pinot Noir, it gives a deeply colored wine, very agreeable and fruity. In order to obtain such a wine, alcoholic fermentation is of short duration and the breeding proceeds in stainless tanks. This makes it possible to extract delicately, and to preserve the flavors of youth. It should be drunk rather young, for maximum pleasure.

 

At the table...

 

Perfect with poultry or a fish stew, rosy calf kidneys or an andouille : Bourgogne Passtoutgrain accommodates of any kind of meat well.

 

 


 

 


 
In the vineyard...
The vines are distributed on several parcels located in bottom of the hillside in Nuits Saint Georges. Gently sloping, on deep brown ground of silt and clays, with strong minerals and of 20 years average of age, they represent more than 2 hectares.
 
In the glass...
This wine is raised partially out of barrels of one or two wines. Our Bougogne presents with average color, moderately crimson in its youth, then becoming orange ruby after a few years of aging in bottle. The cherry and blackcurrant flavors are marked in its youth, after which appear the fur and the humus mixed with candied fruits.
 
At the table...
It will agree with simple food, as well as with some inhabitants of ponds and rivers : roasted fish, carp with the red wine; but also with quail and soft cheeses.

 

 


 

 


 
In the vineyard...
This plot of vineyard of 2.24 ha, gently sloped, presents a argilo-muddy ground of brown-red, not very stony, on lava limestones of Callovien and Oxfordien. The vines, located on the communes of Prémeaux and Comblanchien, are between 10 and 50 years old.
 
In the glass...
Ooften deeply colored, this wine presents the red flavors of fruits (cherry), of liquorice and almost always of fur flavors. Our Côte de Nuits Villages is raised out of barrels of one or more wines, and can age 7 or 8 years - even more in the great vintages.
 
At the table...
According to characteristics of the vintage, it will match nicely with a boiled chicken, a pheasant or a loin of calf, with cod, a pikeperch with red butter, and certain mild cheeses.

 


 

 
In the vineyard...
The Grandes Vignes, 30 to 80 years old, are on limono-clayey colluviums of the bottom of the slope (230m of altitude), calcareous and very stony, which rest on marls.
The parcel of Lavières, at an altitude of 250m, is slightly sloped. Its calcareous colluvial ground at the foot of the slope is of rather deep and stony, clayey-muddy soil. The vinestocks are between 20 and 35 years old.
The vines at the origin of our Nuits Saint Georges Vieilles Vignes (Old Vines), located at an altitude of 245m, grow on a shallow alluvial cone, calcareous and stony, at the bottom of the slope..
On the whole, the field consists of 2.45 ha in appellation Nuits Saint Georges.

 
In the glass...
They are all three raised on dregs, from 50% of new barrels. Rich and deeply colored, with wild fruit flavors : blackberry, blackcurrant, with elegant and present tannins, such is our Nuits St Georges Lavières. Its intense dark color announces the powerful and complex flavors : they mix blackcurrant, blackberry and bilberry. The tannins are firmer for the parcels located at the South and more flexible for those of the North of the town of Nuits Saint Georges. They present on the whole a solid structure. In an average year, the wines of Nuits St Georges will be revealed only as you enter 5 to 10 years; however, at times it can easily take 15 years for these wines to reach maturity.

 
At the table...
Their power and their frame enable them to pair with all the sauced meats that red wine so well celebrates : boeuf bourguignon, wild game, or marinated roasted red meats. A goose with chestnuts or a chicken with salt will also fully express these wines.
 

 


 
In the vineyard...
Resulting from several parcels representing 1.90 ha, one of these is gently sloped to an altitude of 250 m, in ground of rather deep silt on clay, with vines from 35 to 55 years old. The other part, 25 years old, comes from a parcel on the top of the slope (300 with 325m), which is steeply sloping, on humus-bearing black soil, gravelo-stony, very calcareous. The bottom is him also calcareous and stony.
 
In the glass...
Vinified separately, the wines resulting from these 2 parcels are assembled just before the bottling, after a breeding on dregs in 50% of new barrels. Vosne Romanée is the flower of the domaine. Scents of cherry and rose, this wine becomes complex with age, with a nose of underwood, decaying leaves and mushrooms. Its tannins are discrete and consistent, but always elegant. It improves from 8 to 15 years depending on your preferences.
 
At the table...
You will find this wine harmonious with game animals delicately seasoned, such as pigeon or quails with raisins. At the end of the meal, it will be appropriate with fine and delicate cheeses.

 

 


 

 


 
In the vineyard...
On a gentle slope, the colluvial soil is rather deep, argilo-muddy, not very stony, in a small valley at the foot of hill. The vines, 32 ares, are 20 to 25 years old.
 
In the Glass...
From a rather sharp red color, Chambolle Musigny releases the voluptuous flavors of small black fruits. With more maturity, you will find candied fruits, underwood and moss. A flexible structure, delicate and silky tannins make it possible to appreciate it relatively young, but it will easily improve for several years.
 
At the table...
The delicate nature of this wine pairs well with stews, marinated game, duck, capon or lamb which will be able to emphasize this elegant and harmonious wine.

 

 


 

 

 


 
In the vineyard...
Located in northern Nuits-Saint-Georges, this part of the vineyard is situated on brown limestones and stony grounds, with fine texture of clay and silts on the surface, and more clayey underneath. The presence of marls rich in fossil oysters gives this wine its characteristics. The vineyard is rather shallowly inclined, on 41 ares, and the vines are 30 to 55 years old.

 
In the glass...
This Premier Cru is not the most characteristic of the Nuits Saint Georges appellation. As its name indicates, it presents great roundness and smoothness, reminiscent of wines closer to Vosne Romanée. It is characterized by a marked blackcurrant nose, which is fruity exuberant. Its suppleness does not prevent it from having great depth, it is in fact a powerful wine, with excellent aging potential.

 
At the table...
It will pair nicely with roasted red meats, small game or good poultry such as a Bresse or free-range chicken. It will support the majority of cheeses, as long as they are not too pungent.
 

 


 

 

 


 
In the vineyard...
On a shallow slope at an altitude of 250m, this parcel of 42 ares is 55 years old. The soil is rather deep, not very stony, with some clay and silt on the surface and clay in depth. It consists of oligocene and plio-pleistocene material.

 
In the glass...
One finds in this Vosne Romanée the peony, the rose, followed by leather and, with age, humus. It is beautiful with a flexible and solid structure which is accompanied by delicate mineral notes. It can easily be cellared for ten years.

 
At the table...
An elaborate cuisine, such as a subtle fowl with crystallized prunes, a duck in orange sauce, and fine cheeses will illuminate the smoothness of this great wine.
 

 


 

 

 


 
In the vineyard...
The beautiful site of this one hectare vineyard, steeply sloped at the entry of the dale of Concoeur, is intensified by its high altitude (280 - 300m), its south-eastern exposure and a stony nature. The shallow calcareous soil, on a hard limestone subsoil, is at the origin of a concentrated, highly structured wine. The vines of about thirty years have reached the age of maturity and balance.

 
In the glass...
This Premier Cru of Vosne Romanée is perfectly in the style of the village : Silky tannins which support floral notes of hawthorn, wild rose, violet, cherry and blackcurrant. Aging is particularly beneficial for this wine, during which it will reveal truffle and a beautiful concentration of candied fruits.

 
At the table...
Thanks to its beautiful stoutness, this wine will be able to pair with a venison ragout and other marinated game dishes. Certain white meats could for also be paired nicely.
 

 


 

 

 


 
In the vineyard...
This parcel of 46 ares consists of a kind of terrace on a steep slope, in mid slope (275m). The shallow ground of brown-limestone, consists of gravel, clayey silts, on hard limestone. The forty year old vines are of sufficient age to produce balanced and concentrated grapes.

 
In the glass...
Cehe name would come from small wild plum trees found in certain waste lands and whose tannins cling to the gums. This Nuits is thus a sensual and sharp wine, with a rather masculine personality, perhaps not pleasing to the untrained amateurs. Its power confers an excellent potential of aging. With age, it will develop dry prune flavors.

 
At the table...
This wine will be appropriate for regional sauced dishes, such as ham with red wine sauce, big game like roasted wild boar. Its tannic character adapts to a vigorous and spiced cuisine.
 

 


 

 

 


 
In the vineyard...
A ithin a few dozen meters, but a with greater altitude than Clos Vougeot, the soil is completely different : the ground is rather deep, not very stony, although there is bajocian marl in some places. The vines, planted on a surface of 34 ares, are about 60 years old.

 
In the glass...
During the breeding, appreciably the same one as that of Clos Vougeot, the differences are clear. Echezeaux is characterized by its tenderness and breadth. It is often open and expressive early. It reveals a great flexibility, with a constant velvety mouth feel. Raspberry flavors along with those of wild rose characterize it in its youth. It matures earlier than Clos Vougeot.

 
At the table...
Somewhat between Clos Vougeot and Chambolle Musigny, it will excel on a filet mignon, a roasted pigeon, a guinea fowl or a duck with truffles.
 

 


 

 


 
In the vineyard...
Gently sloping, located in the upper portion of the Clos Vougeot, this parcel of 55 ares shows at the same time qualities of exceptional soil and of the grape variety. The vines are 40 years old. The stony and silty-claey soil consists of colluviums limestones of average depth and rests on a marly base.
 
In the glass...
Deep red in color, this wine is harmonious, racy and elegant. A breeding from 70% new barrels develops its exceptional aromatic intensity, with red and black fruit flavors, like cherry, blackberry and blackcurrant. Often austere in its youth, you will find that with age the flavors of damp earth and musk, yet with powerful and fleshy tannins.
 
At the table...
This jewel in the crown of the Côte de Nuits will joyfully accompany with a filet of duck, a roast pheasant or a stuffed capon, a venison sauce with pepper, or milk-fed pork.
