
Resulting from a gravelly earth, not very calcareous, made up silts and clay, the Aligote grape gives a sharp and fresh wine, with a typical rusticity for this grape-variety. The parcel of vineyard, almost 1 hectare, was double-grafted and are about fifteen years old.
The Bourgogne Aligoté is sufficiently solid to preserve its youthful and fruity characters for 3 or 4 years. Flexible and scented, its sharp attack of acid balances with a good fruit in mouth. Of a beautiful regularity, its freshness is preserved by wine making and breeding in stainless tanks.
Color of white-gold with reflection of green, this wine will be a perfect accompaniment for entries of Burgundy such as spotted ham and snails, because their savory flavors will be well balanced with the acidic freshness of the wine. Its fresh and fragrant perfumes point out the grape, the green apple and the lemon flavors agree extremely well with a river fish, oysters or a skate with butter and capers.
